2023 Cabernet Sauvignon, Napa Valley
Tom Meadowcroft says that the key to a quality Cabernet Sauvignon begins in the vineyard with careful and patient farming. He calls this type of viticulture “four wheel drive farming” as opposed to a more lax “two wheel drive” approaches. The 2022 vintage saw longer fruit hang times/extra maturity and fruit development. The meticulous attention and experience is evident in this exemplary bottle of wine.
TASTING NOTES
The 2023 Napa Valley Cabernet Sauvignon reveals deep, expressive aromas of blackberry, raspberry jam, brambly black fruit, and subtle hints of vanilla, tobacco, and mineral. On the palate, layers of dark cherry, blackberry, and blueberry are accented by cracked black pepper and a touch of black tea. Soft yet structured tannins give this wine a grippy texture, leading to a lingering and satisfying finish.
SUGGESTED FOOD PAIRING
This bold and layered Cabernet pairs beautifully with rich, savory dishes like grilled ribeye, rosemary-crusted lamb chops, or slow-braised short ribs. For a vegetarian option, try it with eggplant Parmesan, lentil stew, or grilled portobello mushrooms with garlic and herbs. The wine’s dark fruit and spice also complement aged cheddar, blue cheese, or a black pepper crusted goat cheese.cheeses such as aged gorgonzola, aged sharp cheddar or parmiagiano reggiano.
