Picked at the peak of ripeness, this hand harvest cabernet sauvignon is from a single vineyard in Mendocino County.  The cooler growing season allows for a longer maturation producing an elegant and complex wine.
 
TASTING NOTE:  Ripe blueberry with a hint of crushed rocks and toasted oak grace the nose of this elegant cabernet sauvignon. Rich licorice and brambly blackberry flavors shine through the structured, mouth-filling tannins that are silky and plush.  This is sure to improve with time; best now through 2026.
 
FOOD PAIRING:  This versatile, food-friendly cabernet sauvignon pairs well with traditional main courses such as rosemary braised lamb shanks and filet mignon with rich balsamic glass, but also will complement more adventurous dishes like blue cheese burgers and Asian barbecue short ribs.
