Fermented in 90% Stainless Steel and 10% Acacia Barrel, our 2021 French Colombard expresses bright fruit flavors and refreshing acidity. French Colombard is a white French grape variety that is the offspring of Gouasi blanc and Chenin Blanc. In France, French Colombard is among the permitted white grape varieties in Bordeaux.
TASTING NOTES: This is a rare gem varietal with bright acidity and delicate aromatics of tropical fruit and citrus blossoms, this naturally acidic wine offers a refined complexity that makes it superbly food-friendly. We added used a single barrel lot to add a hint of richness and spice. This is a wine lover's wine- elegant, pair-worthy, and complex.
FOOD PAIRINGS: This refreshing wine will complement lively ceviche or creamy seafood risotto. The acidity in the wine is also a great match for spicy food and garden veggies.
